Turkey Soup


turkey bones, leftover from turkey dinner
1 stalk of celery, whole
1 stalk of celery, finely chopped
1/2 onion, whole
2 carrots, finely chopped
1 onion, chopped
any other vegetables you want to add, chopped into small pieces
1 can chicken stock

In a large pot, place turkey bones and cover with water or until about half full. Add 1 stalk of celery and 1/2 an onion. Bring to a boil and simmer for at least 1 hour or until meat comes off the bones easily. Let cool. Remove bones, cut meat into small pieces. Strain broth. Return broth to pot, add meat and remaining ingredients. Add rice, potatoes or noodles and cook until done. Cook 1 hour. If adding peas, add them during the last 1/2 hour. Season with salt, pepper and garlic powder.

Can also cook the bones the day before. Pick the meat off and strain. Chill. The next day, remove fat, reheat, add meat, veggies, etc. and finish as stated above.
