Spinach Souffle Salad (mrs ulmer)


2 T minced onion
2 cups finley chopped spinach
2/3 cup chopped celery
2 small pacakages lime or lemon Jell-o
2 cups boiling water
1 cup cold water
3 T white vinegar
Dash of salt & pepper
1 cup mayonnaise
1 1/2 cups cottage cheese

Prepare vegetables. Dissolve Jell-o in hot water. Add cold water, vinegar, salt & pepper. Let partially set in refrigerator,
then, using egg beater, beat until fluffy. Add remaining ingredients and place in 2 qt mold or 9x13 pan. Chill until set.

OK to cut recipe in half. Use 8x8 or 9x9 pan.
