Lemon Fruit Mold


2 packages lemon gelatin, 6oz each
6 cups boiling water
2/3 cups mayonnaise
6 oz cream cheese
2/3 cup frozen lemonade concentrate
fruit for garnish (if preparing ahead of time, dip fruit in lemon juice so it doesn’t turn brown)

Dissolve gelatin in boiling water. Reserve 1 1/2 cups gelatin and let stand at room temperature. Blend remaining ingredients and gelatin in blender. Pour into 9x13 dish. Refrigerate until firm.

Arrange fruit in flower designs on gelatin. Refrigerate remaining gelatin until thick enough to coat a spoon. Pour carefully over fruit to glaze.

Recipe can be halved and put in 9 inch quiche dish with fruit arranged in circles.
