Grandma Dyars Cranberry Salad


2 cups fresh cranberries
1 1/2 cups water
1 1/2 cups sugar
1 large package lemon Jell-O
2 cups boiling water

Chop cranberries in blender along with water. Drain berries, saving water to use in Jell-O. Add sugar to berries and let stand. Dissolve Jell-O in boiling water; adding the saved water plus enough to make 1 1/2 cups. Stir well and refrigerate until just starting to jell.

Meanwhile, prepare:

1 cup chopped celery
1 cup chopped walnuts
1 orange, peeled, sectioned and cut into small pieces
rind of 1/2 orange, finely grated
1 apple (with skin on), chopped

Add the above ingredients and the cranberries to partially set Jell-O. Mix well and put back in refrigerator.

Best if prepared a day or two ahead.

Okay to reduce amount of sugar to 3/4 cup; it will still be sweet enough because of the jello. -
