Zucchini Casserole


4 cups sliced zucchini
1 small onion, finely chopped
2 tablespoons flour
2 eggs, well beaten
1/2 cup milk
1 cup Cheddar cheese cut into chunks
salt and pepper to taste

Combine all ingredients in buttered casserole (with deep sides). Cover. Bake at 325 degrees for 1 1/4 hours or until knife comes out clean.
