Cheese Souffle 1 Serving


1 T butter
1 T flour
1/3 cup scalded milk
1/4 teaspoon salt
2 T grated cheese
1 egg yolk, beaten
1 egg white, beaten stiff

Melt butter in saucepan over low heat. Stir in flour using wooden spoon. Pour in milk slowly and cook 2 minutes stirring continuously.

Add salt and cheese and remove from heat. Stir several spoonfuls of sauce into beaten egg yould and then stir into remaining sauce.

Fold in stiffly beaten egg white.

Pour mixture in buttered baking dish. Bake 30 min at 325 degrees. Serve immediately.

OR: Line bottom and side of 10 oz casserole dish with 1 buttered slice of bread cut into 6 pieces (buttered sides down). Beat together: 1 egg
1/2 cup milk
1/4 cup grated cheese
dash of salt dash of onion salt 6-8 drops red pepper sauce

Pour mixture over bread. Bake at 350 degrees for 35 minutes.
