Salmon Loaf


1 can Salmon, drained , skinned, boned and flaked (small can)
2 eggs, slightly beaten
1/2 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
1 teaspoon lemon juice
1 teaspoon chopped onion
1 tablespoon chopped green pepper (optional)
2 cups Special-K cereal (or use 1/2 to 1 cup cracker crumbs)

Combine all ingredients and mix well. Spread in greased 9x5 loaf pan. Bake at 350 degrees for 30 minutes.

Top with cheese sauce:
Make 1 cup thick white sauce and add 1/4 cup cheddar cheese. When cheese melts, pour over salmon loaf and serve.
