Creamed Tuna


1 tablespoon butter
2 tablespoons flour
salt and pepper to taste
1 cup milk
1 can tuna (6oz)
frozen peas, as much as you like (about 1 cup)

Make a thick white sauce: melt butter, add flour, salt and pepper. Remove from heat and add 1 cup milk. Return to heat and boil 1 minute, stirring constantly.

Add tuna and peas. Mixture will continue to thicken as it cooks. Cook 1 minute longer Serve over toast, biscuits or pastry shells.
