Zucchini Cake


3 cups grated zucchini
3 cups sugar
1 cup walnuts
1 1/2 cups corn oil
1 1/2 teaspoon cinnamon
4 eggs
3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Mix squash, sugar, oil and eggs. Combine remaining dry ingredients and mix well. Grease and flour tube pan or 9x13 pan. Bake at 325 degrees for 50 minutes. Let pan cool before turning out.

FROSTING

8 oz cream cheese, softened
1 teaspoon vanilla
2 cups powdered sugar

Combine and frost cool cake.
