Rocky Road Cake

Combine and cool:

1 1/2 cup boiling water
1 1/2 teaspoon baking soda
1 cup chopped dates (about 10 Medjool dates)

Mix in order given:

3/4 cup shortening (or 6 Tablespoons “lighter Bake” or 1/2 cup oil and 1/4 cup shortening)
1 cup sugar

2 eggs

1 3/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt

Add date mixture and pour into greased 9x13 pan. Cover top with 1 cup of chocolate chips.

Bake at 350 degrees for 35 minutes.
