Ginger Streusel Cake


In a large bowl combine and mix well: 1 cup sugar
1 cup oil
1 cup molasses
1 cup boiling water

Stir together 2 1/2 cups flour
2 teaspoon baking soda
1/2 teaspoon ginger
1/2 teaspoon cinnamon

Add 1/2 the molasses mixture and mix well, then add the rest and until well mixed.

Lightly beat 2 eggs and add to batter.

Pour into greased 9x13 pan.

Optional streusel topping:

1/2 cup brown sugar 2 tablespoons melted butter
1 1/2 teaspoons cinnamon
1/2 cup nuts, chopped

Combine ingredients and sprinkle over cake.
Bake at 350 degrees for 40 minutes or until toothpick comes out clean.
