Carrot Cake


2 cups sugar
4 eggs
1 1/3 cup oil
2 cups flour
2 teaspoon baking soda
2 teaspoon baking powder
1/2 teaspoon salt
4 cups grated carrots
1/2 cup walnuts
raisins, optional

Beat eggs and sugar until thick and pale. Stir in the oil gradually. Sift dry ingredients and fold into mixture. Then fold in carrots and nuts (and raisins). Bake in greased 9x13 pan at 350 degrees for 35-45 minutes.

FROSTING

8 oz cream cheese, softened
1 teaspoon vanilla
2 cups powdered sugar

Combine and ice once cake has cooled.
